And while water process can only occur at two plants in the world, in large batches, Colombian producers can produce sugarcane decafs in-country, in smaller batches.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe current version of Skeleton Key was produced by the Caficauca Cooperative, and sugarcane-decaffeinated by DescafeCol. That coffee was a yellow caturra variety from Ulises Nayra and Victoria Ramos, and luckily, Ulises was actually delivering more coffee to Origin at the same time we were cupping. It was a no-brainer to chat, then visit his farm a few days later.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eCaturra - typically bearing red cherries - is a fairly common coffee variety throughout Latin America, prized for both solid productivity and a sweet, if more traditional, flavor profile. But there is a mutation of caturra that produces yellow cherries, and when kept separate and processed with care, it can be a completely distinct experience. Floral, bright, complex, and delicate. It’s not quite at the intensity level of a Gesha or Pink Bourbon, but it’s a unique experience, and arguably a mellower, easier drinker than those other two, currently-fashionable varieties.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eEl Lechero is named after a tree on the farm that produces a milky sap when cut, and this coffee is truly a family effort. Ulises and Victoria oversee both coffee and granadilla production on the farm, their son Dilver splits time between Origin’s cupping lab in San Ignacio and agronomy studies, and Ulise's mother Esperanza and stepfather Maximiliano live just down the road, with family members helping on both farms. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWe’re digging El Lechero for not just its elegant complexity, but also its uniqueness from our other Perus - chocolatey Familia Peralta and fruity La Pomarrosa. This year’s Mungaria hits that nail on the head for us.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eIn Kenya coffee-speak, a factory is a local cooperative, based around a single washing station, and these factories typically organize themselves into larger farmers cooperative societies (FCS) for export efficiencies, farmer trainings, financing, etc. In this case, 219 farmers deliver their coffee to Mungaria Factory, where it is washed using a single fermentation, and dried slowly on raised beds, without a post-wash soak. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eMungaria is part of the larger Aguthi FCS, and while Mungaria is maybe more Huck-famous than world-famous, Aguthi has well-earned international fame. Coffees from fellow Aguthi factory, Thageini, have featured prominently on the World Barista Championship stage, and it’s no coincidence that Mungaria is also delicious.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eOver the past few years, we’ve been lucky to get to know some of the folks at Mungaria, particularly factory president Pharis Kibilenge and factory secretary Bernard Waigwa. And while we’ve visited the factory in years past, this season was our first chance to visit during harvest and meet some of the farmers behind the coffee. Starting with the 2004 Panama Cup of Excellence, Gesha has been winning national coffee and international barista competitions ever since, thanks to its intense floral and citrus flavors.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003ePhantom Limb Blend is the fruitiest of our year-round blends, showcasing a mix of washed and natural Ethiopian coffees. Since the Gesha variety hails from Ethiopia, and Silva-Fernandez family processed it two ways, we figured this was the perfect chance for an elegant, luxury play on our more adventurous house blend. \u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWhile we tend to roast “normal” Phantom with espresso and year-round consistency in mind, in this case, we’re roasting the Phantom Gesha to highlight the best of the variety and the work from Finca La Pomarrosa. It \u003c\/span\u003e\u003cspan\u003ecan work\u003c\/span\u003e\u003cspan\u003e as espresso, but it’s a delicate, nuanced blend that we think truly shines as a filter brew.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eOur main lot from La Pomarrosa is lovely in its own right, so don’t sleep on that! But for Phantom Gesha, expect a mix of sweet fruit loops cereal and fresh rasperries zippy limeade, and a bouquet of elderflower \/ St. Germaine florality. So, we specifically seek out washed coffees from the islands, dried in their parchment to preserve the goodness and keep out the funk. The tiny country of East Timor has been on the come-up the past few years, in large part by focusing on fully washed coffees.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eCafe Brisa Serena is a social enterprise that works with farmers in East Timor's Letefoho district to improve growing and processing practices, obtain organic certification, and access the specialty market. This particular coffee comes from 14 organic-certified family farms in the tiny village of Ducurai that have organized themselves into a group called Lacau, and is all washed on-farm, rather than at a centralized mill. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWhile this coffee does come from a different part of the world, it has quite a bit in common with a subtle, but nuanced washed coffee from Latin America. So if you’ve liked Huck coffees like Productores Cafénor from El Salvador or Atitlán Aprocafé from Guatemala, this could be your jam. We’re tasting chocolate chip cookies, a mix of dried fruits like golden raisins and apricots, and a pleasant, creamy, macadamia-like nuttiness.
